Ask the driver to unload before leaving, and to leave a bit of room on the damaged side rather than tucking the car against a wall. That one request saves a second visit.
A proper lay-by, fully off the road, is fine and we work in them regularly. What matters is depth: enough for the van to sit behind you, not half a car's length on a white line. If the car will still move safely, a car park or a quiet side road a few hundred yards further on is better than either of those.

There is nothing to bed in and no fifty mile an hour limit hanging over you the way there is with a space saver. Check the pressures cold in a week.
